Abstract

Sweet cherry (Prunus avium L.), owing to its thin skin and high respiration rate, is considered a highly perishable fruit during the postharvest period. The application of natural bioactive compounds can improve the quality of horticultural products by reducing losses, extending storage life, and maintaining antioxidant capacity. In this study, the effect of exogenous dopamine treatment on selected biochemical and quality characteristics of sweet cherry cv. Tak Daneh during cold storage was investigated. The experiment was conducted as a factorial experiment based on a completely randomized design with three replications. The first factor consisted of different dopamine concentrations (0, 50, 100, and 200 μM), and the second factor was storage duration (7, 14, 21, and 28 days). Following treatment, sweet cherry fruit were stored under cold-storage conditions at 1 ± 0.5 °C and 85–90% relative humidity. The results showed that dopamine delayed fruit senescence by reducing the rate of biochemical changes, including increases in pH, total soluble solids, and total soluble carbohydrates, while maintaining phenolic compounds and skin color. In addition, increased activity of key enzymes such as phenylalanine ammonia-lyase and reduced polyphenol oxidase activity in dopamine-treated fruit improved fruit quality and storage life. These findings demonstrate the effectiveness of dopamine as a natural agent for maintaining quality and extending the postharvest storage life of sweet cherry.
