اثر دوره انبارداری بر برخی از خصوصیات کمّی میوه و کیفی روغن دو رقم زیتون

چکیده

طول دوره انبارداری، یکی از فاکتورهای مهم و تأثیرگذار بر خصوصیات کمّی میوه و کیفی روغن زیتون است. لذا پژوهشی جهت بررسی اثر دوره انبارداری (زمان شروع آزمایش، 14، 21 و 28 روز) بر برخی از خصوصیات کمّی میوه و کیفی روغن دو رقم زیتون طارم 2 و دزفولی به صورت آزمایش فاکتوریل در قالب طرح پایه کاملاً تصادفی با سه تکرار انجام گرفت. نتایج نشان داد که با گذشت زمان انبارداری تا 28 روز، وزن تر میوه، وزن تر و خشک گوشت، و درصد روغن در ارقام دزفولی و طارم 2 کاهش یافت. همچنین در ارقام دزفولی و طارم 2 با افزایش مدت زمان انبارداری میزان اسیدیته روغن افزایش و میزان فنل کل روغن کاهش یافت. کمترین مقدار کلروفیل (0/31 میلی‌گرم بر کیلوگرم) و کارتنوئید (0/35 میلی‌گرم بر کیلوگرم) روغن در رقم دزفولی و بیشترین مقدار ضریب خاموشی K270 (0/84)، در رقم طارم 2 با افرایش مدت زمان انبارداری در 28 روز بدست آمد. علاوه براین بیشترین میزان اسید اولئیک (56/06 درصد) مربوط به رقم دزفولی بدست آمد. همچنین نتایج نشان داد که نسبت اسید اولئیک به اسید لینولئیک (3/81) و نسبت اسیدهای چرب تک غیر اشباع به چند غیر اشباع (3/55) در روغن استخراج شده از رقم دزفولی بیشتر از رقم طارم 2 بود. بر اساس نتایج مشخص گردید که با افزایش مدت زمان انبارداری، شاخص ‎های کمی میوه رقم دزفولی در مقایسه با رقم طارم 2 از وضعیت مناسب‌تری برخوردار بوده و به دلیل بالاتر بودن شاخص‎ های کیفی روغن می تواند مقاوم‌تر به فرایندهای اکسیداتیوی روغن باشد.
